INTRODUCTION TO WINE

Wine (from Latin vinum) is an alcoholic beverage made from fermented grapes or other fruits. Due to their natural chemical balance, grapes ferment without the addition of sugars, acids, enzymes, water, or other nutrients. The yeast consumes the sugar in the grapes and converts it to ethanol and carbon dioxide. Different varieties of grapes and strains of yeasts produce different styles of wine. The well-known variations result from the very complex interactions between the biochemical development of the fruit, reactions involved in fermentation, the terroir (the special characteristics imparted by geography, geology, climate, and plant genetics), and subsequent appellation (the legally defined and protected geographical indication used to identify where the grapes for a wine were grown), along with human intervention in the overall process. CALIFORNIAN WHITE & RED WINE

California wine is wine made in the U.S. state of California. Nearly three-quarters the size of France, California accounts for nearly 90 percent of American wine production. The production in California alone is one-third larger than that in Australia. If California were a separate country, it would be the world’s fourth-largest wine producer. The state’s viticultural history dates back to the 18th century, when Spanish missionaries planted the first vineyards to produce wine for Mass. Today, there are more than 1,200 wineries in the state, ranging from small boutique wineries to large corporations like E & J Gallo Winery, with distribution around the globe. OREGON WINE

The state of Oregon in the United States has established an international reputation for its production of wine. Oregon has several different growing regions within the state’s borders that are well-suited to the cultivation of grapes; additional regions straddle the border between Oregon and the states of Washington and Idaho. Winemaking dates back to pioneering times in the 1840s, with commercial production beginning in the 1960s. American viticultural areas entirely within the state include the Willamette Valley, Southern Oregon, Umpqua Valley, and Rogue Valley AVAs. Parts of the Columbia Gorge, Walla Walla Valley, and Snake River Valley AVAs lie within Oregon. Boxed Wine

A box wine (cask wine or boxed wine) is wine packaged in a bag-in-box. Wine is contained in a plastic bladder, typically with an air-tight valve emerging from a protective corrugated fiberboard box. It serves as an alternative to traditional wine bottling in glass with a cork or synthetic seal. In 2003, California Central Coast AVA-based Black Box Wines introduced mass premium wines in a box, which served to overturn the stereotype that box wines are an alternate packing on inexpensive jug wine. Within the decade, premium wineries and bottlers began packaging their own high-quality boxed wine, including French Rabbit, Bandit Wines, Octavin, Target, and hundreds of others. Australian Wine

The Australian wine industry is the world’s fourth-largest exporter of wine, exporting approximately 750 million liters a year to the international export market, with only about 40% of production consumed domestically. WASHINGTON WINE

Washington wine is produced from grape varieties grown in the U.S. state of Washington. Washington ranks second in the United States (behind California) in the production of wine. By 2011, the state had over 43,000 acres of vineyards and exports going to over 40 countries around the world from the 850+ wineries located in the state. While there are some viticultural activities in the cooler, wetter western half of the state, the majority (99.9%) of wine grape production takes place in the shrub-steppe eastern half. The early history of the Washington wine industry can be traced to the introduction of Cinsault grapes by Italian immigrants to the Walla Walla region. GERMAN WINE

German wine is primarily produced in the west of Germany, along the Rhine and its tributaries, with the oldest plantations dating back to the Roman era. Approximately 60 percent of the German wine production is situated in the federal state of Rhineland-Palatinate, where six of the 13 regions (Anbaugebiete) for quality wine are situated. Germany has about 252,000 acres of vineyards, which is around one-tenth of the vineyard surface in Spain, France, or Italy. The total wine production is usually around 1.2 billion bottles, which places Germany as the eighth largest wine-producing country in the world. Italian Wine

Italy is home to some of the oldest wine-producing regions in the world, and Italian wines are known worldwide for their broad variety. Italy, closely followed by France, is the world’s largest wine producer by volume. Its contribution is about 7-8 billion bottles per year and represents about one-third of global production. Italian wine is exported around the world and is also extremely popular in Italy: Italians rank fifth on the world wine consumption list by volume, with 42 liters per capita consumption. Grapes are grown in almost every region of the country, and there are more than one million vineyards under cultivation. Etruscans and Greek settlers produced wine in Italy before the Romans started their own vineyards in the 2nd century BC. Japanese Wine & Sake

Regular winemaking began in Japan with the adoption of Western culture during the Meiji restoration in the second half of the 19th century. The main region for winemaking in Japan is Yamanashi Prefecture, which accounts for 40% of domestic production. Although grapes are cultivated, wine is also produced in more limited quantities by vintners from Hokkaido in the north to Miyazaki Prefecture on the southern island of Kyushu. Sake, or saké, is a Japanese rice wine made by fermenting rice that has been polished to remove the bran. Unlike wine, in which alcohol (ethanol) is produced by fermenting sugar that is naturally present in grapes, sake is produced by a brewing process more like that of beer, where the starch is converted into sugars before being converted to alcohol.

New Zealand Wine

New Zealand wine is largely produced in ten major wine-growing regions spanning latitudes 36° to 45° South and extending 990 miles. Winemaking and vine-growing go back to colonial times in New Zealand. British resident and keen oenologist James Busby was, as early as 1836, attempting to produce wine on his land in Waitangi. In 1851, New Zealand’s oldest existing vineyard was established by French Roman Catholic missionaries at Mission Estate in Hawke’s Bay. New Zealand is home to what many wine critics consider the world’s best Sauvignon Blanc. Oz Clarke, a well-known British wine critic, wrote in the 1990s that New Zealand Sauvignon Blanc was “arguably the best in the world." Sustainability and organic programs certify around 95 percent of New Zealand’s vineyard-producing area. Social sustainability is as large a focus as environmental sustainability, the report said.

South African Wine

South African wine has a history dating back to 1659, with Constantia, a vineyard near Cape Town, being considered one of the greatest in the world. Access to international markets has unleashed a burst of new energy and investment. Production is concentrated around Cape Town, with major vineyards and production centers at Paarl, Stellenbosch, and Worcester. There are about 60 appellations within the Wine of Origin (WO) system, which was implemented in 1973 with a hierarchy of designated production regions, districts, and wards. WO wines must be made 100% from grapes from the designated area. In 2006, South African Wine Information and Systems reported that the country had 100,146 hectares of vineyards, with about 55% planted with white varieties.

South American Wine

The Argentinian wine industry is the fifth-largest producer of wine in the world. Argentine wine, as with some aspects of Argentine cuisine, has its roots in Spain. During the Spanish colonization of the Americas, vine cuttings were brought to Santiago del Estero in 1557, and the cultivation of the grape and wine production stretched first to neighboring regions and then to other parts of the country.


Chilean wine is made in the South American country of Chile. Chile has a long viticultural history for a New World wine region dating to the 16th century, when the Spanish conquistadors brought Vitis vinifera vines with them as they colonized the region. In the mid-19th century, French wine varieties such as Cabernet Sauvignon, Merlot, Carmenère, and Cabernet Franc were introduced.


Uruguay is the fourth-largest producer of wine in South America, with a production of 67,000 metric tons and 19,830 acres of vineyards in 2012. Its signature wines are those of red wines produced from Tannat grapes, although several whites, including Albariño and Cocó, are beginning to receive attention internationally.

Spanish Wine

Spanish wines are wines produced in the southwestern European country of Spain. Located on the Iberian Peninsula, Spain has over 2.9 million acres planted, making it the most widely planted wine-producing nation, but it is the third largest producer of wine in the world, the largest being France, followed by Italy. This is due, in part, to the very low yields and wide spacing of the old vines planted on the dry, infertile soil found in many Spanish wine regions. The country is ninth in worldwide consumption, with Spaniards drinking, on average, 21.6 liters (5.706 US gal) per person a year. The country has an abundance of native grape varieties, with over 400 varieties planted throughout Spain.

International Wine

Champagne is a sparkling wine produced from grapes grown in the Champagne region of France following rules that demand, among other things, secondary fermentation of the wine in the bottle to create carbonation, specific vineyard practices, sourcing of grapes exclusively from specific parcels in the Champagne appellation, and specific pressing regimes unique to the region. Some use the term Champagne as a generic term for sparkling wine, but in most countries, it is illegal to officially label any product Champagne unless it both comes from the Champagne region and is produced under the rules of the appellation.



Sparkling wine is a wine with significant levels of carbon dioxide in it, making it fizzy. The carbon dioxide may result from natural fermentation, either in a bottle, as with the traditional method, in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of carbon dioxide injection. Sparkling wine is usually white or rosé, but there are many examples of red sparkling wines, such as Italian Brachetto, Australian sparkling Shiraz, and Azerbaijani “Pearl of Azerbaijan,” made from the Madrasa grape. The sweetness of sparkling wine can range from very dry “brut” styles to sweeter “doux” varieties.

Port & Sherry

Port wine (also known as Vinho do Porto, Porto, and usually simply port) is a Portuguese fortified wine produced exclusively in the Douro Valley in the northern provinces of Portugal. It is typically a sweet, red wine, often served as a dessert wine, though it also comes in dry, semi-dry, and white varieties. Fortified wines in the style of port are also produced outside Portugal, most notably in Australia, France, South Africa, Canada, India, Argentina, and the United States. Under European Union Protected Designation of Origin guidelines, only products from Portugal may be labeled as port or porto. In the United States, wines labeled “port” may come from anywhere in the world.


Sherry is a fortified wine made from white grapes that are grown near the town of Jerez de la Frontera in Andalusia, Spain. Sherry is produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and Fino, to darker and heavier versions that have been allowed to oxidize as they age in barrel, such as Amontillado and Oloroso.
