Cordials & Liqueurs
A liqueur is an alcoholic beverage made from a distilled spirit that has been flavored with fruit, cream, herbs, spices, flowers, or nuts and bottled with added sugar or other sweetener. Liqueurs are typically quite sweet; they are usually not aged for long after the ingredients are mixed, but may have resting periods during their production to allow flavors to marry. Most liqueurs have a lower alcohol content (15–30% ABV) than spirits, but some contain as much as 55% ABV. In parts of the United States, liqueurs may also be called cordials or schnapps.

INTRODUCTION TO Liquors
A distilled beverage, spirit, liquor, or hard liquor is an alcoholic beverage produced by distillation of a mixture produced from alcoholic fermentation. This process purifies it and removes diluting components like water for the purpose of increasing its alcohol content (commonly known as alcohol by volume, or ABV). As distilled beverages contain more alcohol, they are considered "harder.” In North America, the term hard liquor is used to distinguish distilled beverages from undistilled ones, which are implicitly weaker.

Gin
Gin is a spirit that derives its predominant flavor from juniper berries. From its earliest origins in the Middle Ages, gin has evolved over the course of a millennium from a herbal medicine to an object of commerce in the spirits industry. Gin was developed on the basis of the older Jenever and became popular in Great Britain when William of Orange, leader of the Dutch Republic, occupied the English and Scottish thrones with his wife Mary. Gin is one of the broadest categories of spirits, represented by products of various origins, styles, and flavor profiles that all revolve around juniper as a common ingredient.

Brandy
Brandy (from brandywine, derived from Dutch brandewijn (“burned wine")) is a spirit produced by distilling wine. Brandy generally contains 35–60% alcohol by volume (70–120 US proof) and is typically taken as an after-dinner drink. Some brandies are aged in wooden casks, some are colored with caramel coloring to imitate the effect of aging, and some are produced using a combination of both aging and coloring. In a broader sense, the term “brandy” also denotes liquors obtained from the distillation of pomace (pomace brandy) or the mash or wine of any other fruit (fruit brandy). Varieties of wine brandy can be found across the winemaking world. Among the most renowned are Cognac and Armagnac from southwestern France.

RUM
Rum is a distilled alcoholic beverage made from sugarcane byproducts, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels. The majority of the world’s rum production occurs in the Caribbean and Latin America. Rums are produced in various grades. Light rums are commonly used in cocktails, whereas “golden” and “dark” rums were typically consumed individually (i.e., “straight” or “neat”) or used for cooking, but are now commonly consumed with mixers. Premium rums are also available, made to be consumed either straight or iced.

Malt Whisky
Malt whisky is whisky that is made from a fermented mash produced primarily from malted grain. Unless otherwise indicated, it is generally assumed that the primary grain is barley, although whisky is also made using malted rye or other grains. A whisky made from malted rye is usually called a rye malt whisky instead of just a malt whisky. In the United States Code of Federal Regulations, the Standards of Identity for Distilled Spirits define a “malt whisky” as a whisky produced at an alcohol by volume (ABV) level not exceeding 80% from a fermented mash of not less than 51% malted barley grain and stored for aging in charred new oak containers. In Scotch whisky regulations, malt whisky must be made using at least some barley and must be aged for at least three years. The use of new barrels is not required, and the distillation and aging can use higher levels of alcohol by volume.

Single Malt Scotch, Whiskey & Bourbon
Whiskey is a type of distilled alcoholic beverage made from fermented grain mash. Various grains (which may be malted) are used for different varieties, including barley, corn (maize), rye, and wheat. Whisky is typically aged in wooden casks, generally made of charred white oak.

Bourbon whiskey is a type of American whiskey, a barrel-aged distilled spirit made primarily from corn. The name is ultimately derived from the French Bourbon dynasty, although it is disputed whether Bourbon County in Kentucky or Bourbon Street in New Orleans inspired the whiskey’s name.
Single-malt Scotch is a single-malt whisky made in Scotland. To be a single malt whisky, the whisky must have been distilled at a single distillery using a pot-still distillation process from a mash of malted grain. In Scotland, the only grain allowed to be used in a single-malt whisky is barley. As with any Scotch whisky, a single malt Scotch must be distilled in Scotland and matured in oak casks in Scotland for at least three years.

VODKA
Vodka is a distilled beverage composed primarily of water and ethanol, sometimes with traces of impurities and flavorings. Traditionally, vodka is made by the distillation of fermented cereal grains or potatoes, though some modern brands use other substances, such as fruits or sugar. Since the 1890s, the standard Polish, Russian, Ukrainian, Estonian, Latvian, Lithuanian, and Czech vodkas are 40% alcohol by volume ABV (80 proof), a percentage that is widely misattributed to Dmitri Mendeleev. Products sold as “vodka” in the United States must have a minimum alcohol content of 40%.

Tequila
Tequila is a regional-specific name for a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila, 40 miles northwest of Guadalajara, and in the highlands of the north-western Mexican state of Jalisco. Although tequila is a kind of mezcal, modern tequila differs somewhat in the method of its production, in the use of only blue agave plants, and in its regional specificity. Tequila is most often made at 38–40% alcohol content (76–80 U.S. proof), but can be produced between 31 and 55% alcohol content (62 and 110 U.S. proof).
